I think it's best not to worry about this. Like you said, there will be people reading at the weekend, even if fewer people are writing.

If you have an article that ready for publishing, it's best just to get it published.

When you submit to publications, it can take a few days to actually end up getting published. You might submit it on a Wednesday but it doesn't actually get published until Sunday. Of course, if you're concerned about it being published at the weekend, you can leave a private note to the editor asking to wait until Monday before publishing it.
